Maize mexican grill

Maize opened its doors in Champaign on October 1st, 2011 and began the effort of recreating traditional dishes and flavors from Mexico City, Michoacan, and the mountains of a little farm in Guerrero, Mexico.

Everything is made in-house with whole foods from scratch; nothing comes from a can or a box. All corn tortillas are made from organic corn from local central Illinois farms, traditionally nixtimalized, made into masa using volcanic stones, and handmade to each order.

They have expanded beyond their humble beginnings in a counter service original location to add a food truck, an upscale downtown location, and a new restaurant at the University of Illinois Student Union. And they have a commissary kitchen that ensures each location gets the freshest ingredients daily.
